Most coffee shops wouldn't bother with a decaf coffee, let alone a blend to showcase how good it can actually taste. That’s when Uncanny Decaf was born. This blend is intended to bring out the balance and flavor that our speciality blends have while getting decaf to taste like real coffee.

Mountain Water Decaffeination
Mountain Water processing is a 100% chemical free decaffeination process that uses water and carbon filtration to remove caffeine from coffee. Descamex (Descafeinadores Mexicanos), the company that developed this specific water process, sources the water used in their processing from the glacial waters of Pico de Orizaba, Mexico's highest mountain (hence, mountain water).
Sugar Cane Decaffeination
The Sugar Cane Decaf Process, unique to Colombia, enhances coffee quality by increasing sweetness and preserving complexity. It involves fermenting and distilling sugar cane to obtain ethyl acetate (EA), derived directly from sugarcane. When coffee is introduced, the caffeine is extracted, infusing sweetness. After extraction, steam removes the EA, leaving less than 5ppm in the batch. Ethyl acetate, found in younger wines, imparts fruity aromas and flavors, and a batch of sugarcane decaffeinated coffee contains 20 times less EA than a ripe banana.
