Introducing Yinyini Avilez’s certified organic and naturally processed red bourbon. He started working on his family farm, La Estrella, when he was only 13 years old. Today, he runs the farm alongside his wife and son, maintaining a proud family legacy. His coffee is all certified organic while also maintaining a super high quality even with the hurdles of invasive weeds and pests. As an active member of ASOPAP, he shares his knowledge with other farmers and guides them through effective organic farming practices.
A farmer’s decision to grow a certified organic crop has massive benefits while adding tons of labor and downsides. Farmers are offered premiums for organic coffees but most don’t push for higher quality crops due to the increased effort. For cases like Yinyini, he takes on the added responsibilities such as tedious weeding, learning about all the local pests, and battling for certification year after year. Some benefits at the farm level include super healthy soil for years to come, better biodiversity, and it’s safer for workers since they’re not exposed to toxic chemicals. There is something to be said for this coffee which is both organic and tastes incredibly delicious with all that body!
